Non-alcoholic sparkling wine starts as real wine. The alcohol is gently removed, then the bubbles are added back, so you get the crisp acidity and fine fizz of a glass of bubbly with 0.5% alcohol or less. Planning a party? A 750 mL bottle pours about six flutes. Mini bottles of 200 or 250 mL, like St. Regis Sparkling Rosé or Leitz Eins-Zwei Zero, are perfect for a single toast at midnight. Serve well chilled, between 6 and 8°C, and try a virgin mimosa for New Year's brunch.

Wine is made as usual, the alcohol is removed by gentle vacuum distillation, then the wine is carbonated before bottling.
With a good stopper in the fridge, one to two days. The bubbles fade faster than in regular sparkling wine, so smaller bottles are great for one or two people.
