Non-Alcoholic Mezcal

It is an alcohol-free spirit inspired by mezcal, with the smoky agave flavour that mezcal is known for. Almave Humo, for example, is made with Espadin agave.

Smoky, earthy and a little floral, with agave sweetness and a bit of pepper. Monday Mezcal is described with campfire smoke and pepper, and Undone Mexican Smoky Agave with floral and pear notes.

Lime juice, grapefruit, ginger beer or pineapple all work. It makes a good smoky margarita or a mezcal-style paloma, and some people sip it on ice.

For smoke and agave, try Undone Mexican Smoky Agave, which has floral and pear notes, or Almave Humo, made with Espadin agave. Monday Mezcal is another option, and Little Saints St. Ember is a mezcal-inspired spirit infused with lion's mane.

Shake the non-alcoholic mezcal with fresh lime juice and a little agave syrup over ice, then strain into a glass with a salted rim. Top with a splash of soda water if you want it lighter.
