First Impressions

It pours a pale wild rose pink, clear and bright, with a fine stream of bubbles that keeps climbing long after the glass is filled. This is the alcohol-free answer to Nova 7, the wine that put Benjamin Bridge on the map, and the family resemblance is immediate. The nose leads with ripe peach and lychee, then opens into guava and a soft note of orange blossom. There is a floral lift here that most non-alcoholic sparklers never reach, and it sets the tone before the first sip.

How it actually tastes

The palate is off-dry and lively, built on Muscat grape must rather than flavoured water, and you can taste the difference. Citrus and green apple arrive first, crisp and a little tart, before honeysuckle rounds out the middle. The bubbles are fine and persistent, carrying the fruit rather than scrubbing it away. The finish is clean and quick, leaving just enough sweetness to invite the next sip.

What Nova Zero gets right is restraint. It stays aromatic and refreshing without tipping into the syrupy territory that sinks so many alcohol-free bottles. A Small Ritual I Like

Serve it properly cold, straight from the fridge, in a real wine glass rather than a narrow flute. The wider bowl lets the peach and orange blossom open up, and the cold keeps the bubbles tight and the finish crisp. A single 250mL can fills one generous glass, which makes it an easy pour for one without opening a bottle you have to finish.
